have a question, how did they make the doors open without using pistons? Did they use a command block or a plugin? If so, could you show how?

MCME uses extensive plugins to get our world to work. For the "Door" we utilise a custom "Animation Plugin".

By "chaining" together frames you can get nice door animations working, but this plugin does have more applications than just making Opening Doors
